RECIPE:
Spaghetti and Meatballs (Serves 4-6)

INGREDIENTS:

For the meatballs:
1 ½ lbs. Ground beef
⅓ cup Italian bread crumbs
⅓ cup water
1 large egg
2 ½ teaspoons garlic powder
2 teaspoon dried parsley
¾ cup grated romano cheese
2 tablespoons olive oil
2 tablespoons canola oil

8 oz. spaghetti, cooked to al dente

For the sauce:
1 28 oz jar plum tomatoes (whole)
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried basil
2 teaspoons dried oregano
½ tablespoon sugar
½ cup grated romano cheese
Salt and pepper to taste

DIRECTIONS:

First make the sauce. Add olive oil to a medium pan over medium high heat. Add the onions and garlic and saute until translucent, about 3-5 minutes. Add the cooked onions and garlic and the rest of the sauce ingredients in a blender. Blend until smooth. Return to the pot and bring the sauce to a simmer. Add the cheese and stir until melted. Allow to simmer as you make the meatballs.

To make the meatballs, start by mixing the water and bread crumbs together to make a paste. Add the bread crumb paste, egg, garlic powder, dried parsley and romano cheese to the ground beef. Use your hands to mix until the ingredients are evenly distributed throughout the meat. Coat your hands in olive oil and shape about 1 ½ tablespoons worth of the mixture into meatballs.

Once the meatballs are shaped, heat a large pan over medium heat with canola and olive oil. Add meatballs and brown them on all sides, about 8 minutes.

Once the meatballs are nicely browned, add the tomato sauce to the meatballs. Cover and allow to simmer until serving.

To serve, add spaghetti to a plate or shallow bowl. Top with generous amounts of sauce and meatballs.

Christy was married to her husband on New Years Eve , 2013 in Banff, Canada after having met in a screenwriting class in college. She became impassioned with directing and made her debut in Lionsgate’s “Christmas All Over Again”. While she still works as an actress, she enjoys living in Orange County with her husband, Brendan Rooney, and daughters, Isabella and Sophia.
